
Friday Foods – #VanLife Loaded Mac and Cheese
Continuing our #YourLead van recipe series, this childhood favorite can also be known as “Cleaning Out Your Cooler.” One night, Heidi and I found ourselves craving some comfort food but also facing a cooler full of food that may or may not have survived the next few days. So we concocted a dish that combined the best of both worlds!
#VanLife Loaded Mac and Cheese
Makes 2 servings
1/2 teaspoon salt
1 box macaroni & cheese
Chopped vegetables (we used carrots, broccoli, and corn)
1 tablespoon butter
2 slices of deli meat
1/4 cup pepper Jack cheese
1/4 cup Cheddar cheese
At Camp
Add salt to a pot of water; bring to a boil and add pasta and chopped vegetables.
When the pasta is ready, drain carefully into the leakproof container. Add butter and powdered cheese packet to pasta. Stir in sliced meat and fresh cheeses. Congratulate yourself for eating all your food before it spoils!
