
Friday Foods – #VanLife Eggs and Kielbasa
If you’re a loyal Friday Foods recipe reader, you may recall last week when I mentioned choosing ingredients carefully when you live in a van so that they can be used in a variety of dishes. This eggs-and-kielbasa breakfast was created with the leftover ingredients from our #vanlife nacho pasta. The addition of eggs and meat gave us enough protein to power through a long day on the trails.
#VanLife Eggs and Kielbasa
Makes 2 servings
1 tablespoon butter
2 cups kielbasa
4 eggs
1/2 cup chickpeas
1/2 cup black beans
1/2 teaspoon salt
1/4 cup pepper jack cheese
1/4 cup cheddar cheese
1/4 cup salsa
1 tomato
1 avocado
At Camp
Melt the butter in a frying pan. Add kielbasa, and stir until browned. Add eggs to kielbasa, stirring constantly so they don’t stick to the pan. When eggs start to set, add chickpeas, black beans, salt, cheeses, and salsa, and stir together until warm. Top with tomato, avocado, and additional salt if needed. Enjoy!
