Portable pumpkin pie! Okay, it isn’t quite the same, but this recipe from A Fork in the Trail still tastes really great.
Pumpkin Pie Leather
Makes 4 servings
1 cup cooked canned pumpkin
1/2 teaspoon cinnamon
1/4 teaspoon ginger

Mix the pumpkin and spices together. Spread the mixture about 1/4-inch thick on lined dehydrator trays. Let it dry for 6 to 15 hours—the timeframe depends upon the consistency of the canned pumpkin, which varies by brand—until it is pliable like leather. Cut it into pieces, wrap it in plastic wrap, and store it in the refrigerator until your trip. This snack will keep for up to 6 months if refrigerated and for 6 to 8 weeks without refrigeration.
