
Friday Foods – #VanLife Tex-Mex Migas
The last installment of the #vanlife edition of Friday Foods recipes comes from our friend Justin from Bro’d Trip. We met Justin and his brother, Adam, in Oregon and decided to pool together our remaining groceries to cook up a breakfast feast like their mom used to make.
#VanLife Tex-Mex Migas
Makes 2 servings
4 corn tortillas
1 tablespoon butter
1 onion, diced
1 red pepper, diced
1 jalapeno, diced
4 eggs
1/4 cup pepper Jack cheese
1/4 cup Cheddar cheese
1/4 cup salsa
Salt and pepper to taste
At Camp
Slice the tortillas into strips. Melt the butter in a frying pan. Add tortilla strips, stir until slightly browned and crispy, then remove and place onto a paper towel-lined plate.
Add vegetables to the pan, stirring frequently so they don’t stick. While the vegetables are cooking, crack the eggs into a bowl and whisk with a fork. Pour the egg mixture evenly into the pan with the vegetables, and let the eggs set. Add the tortilla strips to the eggs, then sprinkle cheeses over the top. Once melted, spoon the migas onto plates and add salsa, salt, and pepper.
