Friday Foods: Tropical Salsa
Makes two servings
2 tablespoons lime juice
1⁄2 cup crushed pineapple, drained well
3⁄4 cup plum tomatoes, drained and chopped
1/8 teaspoon cumin
1⁄4 teaspoon kosher salt
1⁄4 teaspoon dried cilantro
1 tablespoon green onion, chopped
1⁄2 clove garlic, minced
1⁄4 teaspoon (or to taste) chipotle pepper sauce
Combine all the ingredients together in a large bowl and place in a ziplock freezer bag.
Place inside wraps or dig in with tortillas!
